The Neekid Fatty



I make breakfast fatties stuffed with fried potatoes, ham, scallions, jalapenos and cheese...then wrap them in bacon and smoke until crisp.
This time I opted to do a regular ole neekid fattie. (thanks to the inspiration of talented smoking friend gtr) No seasoning, so stuffing, no bacon, no nothin'...just a chub of maple sausage on the smoker.
It wasn't easy for me to do this. Proved to be more difficult than I had imagined. I carried the chub of sausage out to the waiting drum and told myself to just drop it and walk away.



While the fattie smoked, I whipped up a batch of corncakes




I brought the fattie up to an internal temperature of 165F.


Fried some tatoes, scrambled an egg and was set to go.






I'll have to admit, the neekid fattie was danged tasty! Much quicker to make than my usual breakfast fatties.  I will make these again for sure.

Looks delish cowgirl. How long did it take to get it to temp? was that about 1 lb of sausage? JP has been cranking out some his own sausages. I'll have to post. He put some in a pot of black bean this weekend and it's going to feed us for a while..haha.

Sitting here trying to decide what to have for breakfast.....It won't be a neked fattie, but maybe tomorrow....;)
Clear cold nights, warm days. Arrrrgh,.....the weeds are gettting a good head start.
I'm not ready for spring yet.

I didn't time the fatty...probably took about 2 hours. I was simmering a pot of venison at the same time.
Looking forward to seeing the sausage you two made, bet it is delicious!
