I wanted to roast a few quail over the fire while camping last time and had planned on just whittling a stick down to slow roast them. Then someone wanted brats....with jalapenos and bacon....and you can't have bacon wrapped brats without onions, kraut and spicy mustard.. so the menu grew. :)
Skewered the quail and seasoned with Tatonka Dust
wrapped a few of them in bacon...
and onto the fire to slow roast....
added the kraut to the onions....
a jalapeno stuffed bacon wrapped brat with caramelized onions, kraut and spicy mustard...
I was a happy girl!! :)
A couple of roasted quail on a stick and a cold beer to wash it down, it was a perfect meal for sitting around the campfire that night. I hate to say it but it was a heck of a lot better than a marshmallow on a stick. :)

Love the look of the quail on the stick, very primal. Would you say it's closer in taste to chukar or dove?

I would say closer to chukar..they are really mild in flavor. I love dove but love quail a lot more. lol

Oooh the brats with the bacon and jalapeno is a great idea, brats was one of the things on the menu for vacation on the lake and I sure will be using your idea! Thanks and it sure looks good.
that looked to be pretty good eats from what I see. I think I saw a Budweiser beer holder with maybe a bud in it. Now your talking my kind of beer.
Funny how meals can expand so easily - everything looks outstanding, especially in the fadding daylight.
