Just Some Good Ole Pulled Pork
Nothing fancy...just had a craving for some good ole pulled pork. I also needed to replenish my freezer stash. :)
I injected a pork shoulder with spiced up beef stock then sprinkled with Big Poppa's Little Louie's rub..
into the drum with a kiss of hickory...
smoked to 200F internal temperature, wrapped and let it rest in the ice chest..
meanwhile...
I sauteed onions, garlic, bacon and peppers. Added them to a pot of beans.
wrapped and seasoned some ears of corn...
into the drum while it was still hot..
topped with some Boot Kickin' Spicy Q sauce and served with some of my twangy dill pickled beans and slaw....I was a pretty happy girl. :)

The Two Exes look right at home but the two stringbeans look kind of lonely next to all that gorgeous meat.

Hard to beat good "good ole pulled pork" especially when side with corn and beans.
I was just thinking about making some of your corn yesterday. It all looks great. The two beans in the first plated picture...that is just about the right balance of meat to veggies (ha ha)
poetcomic I was thinking the same thing. The two pickled beans look odd but I knew I couldn't handle eating any more of them than two...They are so twangy, they make my eyelids sweat! lol

Your beans have the consistency that I strive for and have problems achieving. What is your bean to water ratio and how long and what temp do you cook them at? They just look outstanding, along with everything else of course...;)

Bill I don't measure. I soak the beans overnight, drain, add chicken stock and let them simmer for awhile before putting them in the cooker. It gives them a head start (they take so long).
The temperature on this batch was about 275F.

lol Jake, I don't have time to gain 400 lbs. Now that I think of it...my friends don't either. Probably something to do with these range-bred fence jumping cows. lol
