Good friend Phesant from Wisconsin recently sent a package of some of his fresh caught walleye and Bear Lard for me to try.
I loved the bear fat biscuits and finally had the chance to cook up some of the beautiful walleye fillets.

The walleye fillets...
The wild onions are doing great this year... I like to use them every chance I get.
I drizzled a couple of the walleye fillets with oil, seasoned them a bit and placed them on lettuce leaves to protect the bottom of the fillets while grilling over the fire.
Set up my horizontal woodburner for grilling...
The leaves worked great, the fillets stayed moist and flakey.
I sauteed the wild onions in butter. When tender I added a squeeze of lemon juice and about one tbs of sherry.
Then added the grilled walleye fillets to the skillet....
The fresh grilled walleye fillets with wild onions..... and a sip of wild plum wine.
The walleye was soooo good! Not sure if you will see this but I can't thank you enough Pheasant, one of my favorite meals to date again! :)

Jeanie, you always cook my favorites. After panfish (bluegills and sunfish), fried walleye is my favorite. The only thing that could have made that meal better is hushpuppies fried in the bear lard...
Yum! Great idea with the lettuce leaves - my fish always falls apart on the grill so I'll definitely try this trick!
I probably pass wild onions all the time. I should start looking out for them.

The lettuce worked great. I closed the lid on the cooker and didn't have to flip the fish over.

I'll have to try the lettuce trick, I use one of those baskets that works kinda ok....
OH YEAH! good job, we don't have walleye here but I'm thinking that some fresh catfish is worth a try.

I think I have a wire basket for fish too... I need see if I can find it. They do work pretty well too.

I'd never heard of walleye fish until our neighbors from Minnesota had us over for dinner.....and it was delicious. Your recipe looks scrumptious!

Those look delicious! I really like the idea of using the lettuce leaves. I'm gonna have to try that. And there you go with the cast iron skillet again - reminding me that without one, I can't call myself a cook yet!
