Good ole Fried Cabbage

Talked with friend Dave awhile back about what he has been up to this fall. He could work circles around me! Cutting wood, butchering hogs, running his farm, canning produce from his garden... he had a bumper crop of cabbage this year and put a lot of it up as freezer slaw.
One thing he mentioned was his love of fried cabbage. I couldn't stop thinking about it, I had to make a batch.
I love it too! I don't make it very often but it's one of my favorite comfort foods. :)

There are many ways to make it, I do it this way..
I sauteed sliced onions and minced garlic until tender in bacon drippings..



I added cubed smoked pork to the skillet....



then the cabbage....



Cooked until tender, seasoned with kosher salt and cracked black pepper, then gave the cabbage a quick squeeze of lemon juice.






I love the stuff. :)



Goes well with jalapeno cornbread too.

Never had fried cabbage, but with the onions and meat can see it would be delicious. Can you tell me more about freezer slaw? I've never known a way to preserve cabbage other than kraut or keep it in a cold place.

Boy...does this sound and look good! Gonna be fixin that soon. Oh and how do you freeze cabbage? There was a great buy recently on peppers (green red, yellow) so hubby bought a bunch and we froze them (sliced and put in freezer bags). ~Tricia

Hay Jeanie! I love cabbage but never had it fried. Will have to give it a try. I was looking back at earlier post the one about makeing a fattie piston this was testerday. Last night I dreamed that I used my jerkey cannon to make the fattie! Worked good in my dream will have to see how it workes in real life.lol The weather has turned warm so had to put the hogs on hold. Maby this weekend will let you know how it turns out. Two 400 lb hogs will give me something to do this winter! Hope you have a blessed day your friend Mark:)

Hey Jeanie, the cabbage looks pretty darned good. I love cabbage also and don't have it enough. I think I like almost anything cabbage, especially cabbage soup (bortch), if that's how it is spelled. And cabbage rolls. I'm just catching up on a some blogs, as I hav'nt been on the computer much lately.
