Blackstone Tex-Mex Griddle Pizza




I'm not sure what to call this. It's a cross between pizza and flat bread.  :)

Used the Blackstone griddle (I'm enjoying this thing)....started with browning chorizo and burger, scallions and onions, peppers and hatch chiles.





combined the burger and chorizo, scallions and onions, then made room for some smoked, cooked chicken that I had shredded.





Scootched everybody over to make room for my pizza dough.
I pressed the dough out with my hands  before and after laying it on the griddle.
I did add a bit of oil to the griddle before placing the dough down, also left the beef and chorizo drippings on the griddle too for extra flavor.




I let the dough catch some color and get a little crisp before flipping it over...



then topped the dough with black beans and pintos...



started building the "pizza" by topping it with the beef and chorizo mixture...



added the smoked chicken...




and the caramelized onions...



the griddled hatch chiles...





peppers...



cheese... ( I like mozzarella and provolone)



covered to heat through...
I do have a better steam pan now. lol



Drizzled with sriracha, a squeeze of fresh lime juice and a few sprigs of cilantro...









I really liked this thing.








There are so many options for toppings.
I'm looking forward to experimenting. :)

We've had our Blackstone for about a year and love it. We did a grilled cheese bar and soup luncheon at work which was great. Just a bunch of cheeses, breads, etc. People put what they wanted together and brought it to me at the flattop for cooking. Great product! My last post was about it actually.

Chris that sounds great! I love grilled cheese and haven't even made one yet on my griddle. That sounds like a good way to feed a crowd and everyone can build their own. Thanks for the idea!
