I'm behind on posting (and other things too lol) but wanted to post a cook I did awhile back.
This was at my favorite little fishing hole. I mainly went for the quiet....parked my fishing pole and walked around enjoying the wild flowers.
I didn't catch anything until I brought in my line to pack up and leave. A bass hit as I reeled in....
It was a really nice evening. :)
I cleaned the fish that night and saved it for supper the next day.
Cut the ends off of some leeks, separated the leaves and washed them.
Thought about blanching the leaves in water but about 15 seconds in the microwave made them pliable.
Stuffed the bass with cilantro, garlic, leeks and limes then sprinkled with Big Poppa Smokers Jallelujah Jalapeno Seasoned Salt.
Topped with more leek leaves, rolled and tied....
Into the drum with some spicy rice.(minced onion, garlic, green chilies, tomatoes, chicken stock and some seasonings)
Looks better with a lime eye. :)

Loved the kick the Big Poppa dry rub gave the fish and the leek leaves added another layer of goodness.
Hope to make this again! (if I catch another fish) :)
