Using the Smokehouse Again




One of my cold smoke sessions in the little smokehouse. I needed to replenish my supplies!



I placed sticks of butter, duck eggs and quail eggs over ice to keep them cool..
to the bottom right, chocolate chips.. left is a garlic/parsley blend.. and a pan of black rice..




Smoked some mixed peanuts, a wild rice blend...


pecans...


removed the eggs and butter after a couple of hours and placed the chocolate chips on the ice to go a little bit longer...

black olives on the top shelf...


sea salt
a pan of coarse salt, cracked black pepper and garlic blend...


anasazi beans and turbinado sugar...


a variety of cheeses and a string of jalapenos.... ( I slit each pepper for better smoke penetration)






I cold smoked the butter and eggs with a combination of alder and pecan. Used a stronger wood to finish the rest..







Some of the things I've made with the stuff..

Smoked pecans with a butter, brown sugar, cayenne glaze...


Smoked olive tapenade with garlic, cracked black pepper, olive oil, kosher salt, capers and scallions..


smoked deviled eggs with bacon...




seared some scallops in smoked butter...


smoked pecan stuffed french toast...
smoked pecans, cream cheese, maple syrup, powdered sugar and a dash of vanilla...





Venison pho...
Took a partially frozen white tail tenderloin and shaved it into thin slices..


added smoked quail eggs and smoked jalapeno slices..


The hot pho broth "cooks" the venison....





This is pretty much the same stuff I cold smoked last time. I was out!
I cold smoked with alder and pecan for the first 2 hours then kicked it up with some hickory for the rest of the smoke. Everything gets stirred every 30 minutes or so. I taste the chocolate chips and remove them when I like the flavor.

It actually rained this weekend! I had forgotten how wonderful rain smells. lol I couldn't find a mud puddle to splash in, but was happy to see the rain soak into the ground.
Hoping to get my veggie garden planted this week. The nights have been too cold, so the garden plants are still hanging out in my living room. They are huge! lol

Blackstone Griddle Breakfast Pizza




A quick and easy breakfast on the griddle! I started by browning some sausage and hash browns...



Tossed a store bought pizza dough on the griddle to brown the bottom...


Flipped the pizza crust over once it was browned...
topped with cheese and fried some eggs to the side to give them a head start.





Started the pizza build. Hash browns and sausage first...


next came the eggs, scallions and a bit more cheese..




Steamed to set the tops of the eggs...









This came out pretty tasty!  I sprinkled with a bit of crushed red pepper to give it a "bite".
I'll be making this again.

The darned wild fires are striking Oklahoma again. No rain but I'm not getting discouraged. The critters are doing well and so am I. lol

A Crawdad Po'Boy Pizza



I had some nice crawdad tails from Louisiana and thought about making the usual fried tails or Crawdad Po'Boys. Got to thinking about the ingredients and figured this concoction would be pretty near the same.

Soaked the tails in milk, rolled in seasoned flour that I added some Seminole Swamp seasoning that was gifted from talented cooking friend Bluetang in Florida. (Thanks again!)







I double dipped the tails and fried til golden...






I made some remoulade sauce. Started with mayo, spicy brown mustard, pickle juice, Seminole Seasoning, garlic, paprika, cayenne, can't remember what else. lol 





I smooshed my pizza dough to fit the peel, then slathered with remoulade...


Started my build with scallions, onions and a bit of cheese..


Next came the crawdad tails, some fried and some regular. Onions and crisp bacon...


Into the Blackstone oven...







I kicked the heat up to hurry the job. I was hungry!





The oven is quick. It doesn't take long to bake a pizza!


added a layer of shredded lettuce...


topped with tomatoes, more onions and some crisp bacon...




Drizzled with more remoulade and called er good.





Drizzled with a bit more remoulade and served with a cold beer...


I really liked this! It was pretty tasty. I'll be making it again for sure..

Actually received 1/2 inch of snow the other day. It was nice! Not quite enough for snowballs or snow ice cream but any moisture on the ground is welcome.
