Dutch Oven Stuffed Onions





These have turned into one of my favorite things to make while camping. They take just a few minutes to prepare ...... and 35 or so minutes to cook. The aroma of the onions baking drives me crazy, (they smell so good), but they are worth the wait!


I cover the bottom of the dutch oven with cubed potatoes, then cut two onions in half and hollow them out with a spoon. (Save the insides for cooking later).
The potatoes help keep the onions upright, and they are tasty too!


I make a meatloaf filling. My favorite is so simple....the recipe on the back of instant onion soup mix!


Stuff the onions and sprinkle with seasoned bread crumbs for a nice crunchy top.
Add enough beef stock to almost cover the potatoes...



Burn a few logs down to get a good bed of hot coals...



I place the dutch oven in the center and shovel a few hot coals on top...






then sit back and fish while the onions cook...



I rotate both the pot and the lid every so often...the onions take about 35 minutes.


They smell SO good. :) I love cooked onions though...

One of those camp meals that I need to make at home but never think about. :/

The weather has been insanely warm here. Almost 90 the last few days. I'm still getting okra and tomatoes from the garden.

General Tso's Salmon on the Grill





One of my amazing friends in Florida, sent a bottle of General Tso's sauce for me to try. (Thank you again Tim!) I hadn't tasted it before, but love General Tso dishes at the local Chinese restaurant.
After a pinky finger taste test, I decided to try the sauce on a slab of salmon.



I trim the belly and tail off the slab, for even cooking. I DO save the pieces and cook them too.


The General Tso's sauce...


after trimming the salmon, I painted with several layers of the sauce...



sprinkled with sesame seeds...


then scored the fish for more smoke penetration...





into the Hasty Bake...


I keep an eye on the juices and try to pull the slab off of the heat when the juices rise to the top..

Really liked this sauce! It wasn't as hot or spicy as I thought it would be. I'm thinking of other things to try it on. Not sure if you will see this, but thank you again Tim for sharing the sauce. I appreciate it!


btw, I devoured the belly piece as soon as it was finished cooking. One of the bonus' of being the cook. :D

Catfish n Okra Over the Fire




I was able to get away for a couple of good camp/fishing trips the end of summer. It was nice to be able to relax and I actually caught a few fish.
Before leaving home, I picked what okra was ready in the garden. Decided it would go good with my finger food fish meal.  (pic of a few, I had more already cut up)



soaked in milk...



used a mixture of
1/2 cup cornmeal
1 cup flour
cayenne to taste
salt, pepper and a bit of garlic powder



cleaned a couple of catfish, let them soak in 1/2 and 1/2 while I prepped the coating.





got the fire going and heated some oil in the pot for the okra...


I had more okra than fish, so I started frying it first...


used a skillet to fry the catfish...





The weather was nice that day. It rained a few times on this trip but I didn't mind. It was so nice just being out there.





That was pretty much it. Catfish n okra...




and a cold "MINE" to wash it down. :)


The catfish was white and tender...



It was a nice evening by the campfire...




I caught enough catfish to bring some home for the freezer. They weren't frankenfish, but  they were keepers. :)

Hope everyone had a great summer!
I was able to get away for a couple of camp trips. Also a week long trip to a music festival in Winfield Kansas. It was amazing!  I'm a fingerpicking guitar player, so it was great to see so many talented musicians in one place.
The veggie garden did well and I was able to can quite a bit. I'm not ready for winter but thinking back... I'm never ready for the cold. :)
