Smoked Scalloped Taters n Ham
I love smoked ham.....and one of the benefits of smoking a ham is the leftovers!
This is a store bought ham, not homegrown. I smoked it in the Memphis Pro and used a mustard, brown sugar, whiskey glaze.
I dined on the ham the first night. Then the next night I sliced some tatoes and onions into a skillet, then added a layer of smoked ham slices...
then added cheese and more sliced tatoes...
Then I made a basic white sauce with butter, flour, milk and seasonings..
Poured over the tatoes, ham and onions and it's ready for the smoker.
Into the Memphis Pro again...
I foiled the skillet loosely until the tatoes were tender...
then removed the foil and added more cheese....
Smoked til hot and bubbly ..
It was ooey and gooey and comforting...
I love this stuff! The addition of smoke adds another layer of flavor to the taters.
It's a nice comfort food. :)
The weather has been great here! Actually have had a few thunderstorms. The pastures are fairly green now and the horses and cows are happy. Haven't had the chance to go fishing again but hope to do so soon.

15lbs of Smoked Crab Legs in the Drum
This was an earlier cook... but not in 2005. lol I was trying out a new camera and didn't set the date.
Smoked crab is one of my favorites and so easy to do! The only crab legs available to me are frozen.
I thaw them out, then place them into the drum at 275F to 290F. Then just rotate them every once in awhile so everyone catches some smoke. They will dry out if left in the cooker too long so I remove them as soon as they are heated through.
They take about 30 minutes.
They are SO tasty with garlic butter.....and the light smoke gives them another level of goodness.
There were steaks involved in this cook but I didn't get any pics. I was in charge of the legs. :)

Just a Steak
Still having a few blogger and photobucket issues. I think I'm narrowing it down though. Testing them out with these steak pics...
This was a quick cook on the Char-Broil double burner. I really like the thing. It's small but sometimes you don't need a big grill to get the job done.
I cooked these awhile back but just ran across the pics.
hmmmm....now I'm hungry! :)
Looks like the Google Chrome will work for posting pics. I'll get after photobucket and try to resolve the issues there.

Pulled Pork Pie (again cause I love the stuff :))
This is still one of my favorite uses for leftover pulled pork.
I injected a pork shoulder with some kicked up beef stock, then seasoned with Tatonka Dust, Simply Marvelous and Big Poppa's Money rubs...
Into the Big Poppa drum until done..
I usually make the crust with sliced potatoes but went with shredded potatoes this time...
added some of the pulled pork, seasoned with more dry rub, minced onions and a few minced jalapenos..
Drizzled with some Thomas Q sauce... ( good stuff!)
Added smoked provolone cheese as a binder...
Topped with a bacon lattice and seasoned with more dry rub...
Into the Memphis Pro smoker until the pie was heated through and the bacon was crisp..
I liked the shredded tatoe crust on this one, worked out well.
I drizzled the slice of pulled pork pie with more Thomas sauce...
I really liked this version...will make it again!
Still having issues with Photobucket and blogger. I have tried three different browsers but the problems haven't been resolved.
I'm not a computer person, I spend my time outdoors. lol I can tell you how to change the leathers on a windmill or how to pull a calf but when it comes to computers, I know zip!

Ever feel like you're taking one step forward and two steps back?
Seems like I've been doing that a lot lately. lol
Between photobucket problems, blogger problems, email problems and computer problems, I'm not getting very far with anything computer related.
Things could always be worse though. I'm fairly healthy and happy. :)
The calves are on the ground, the rest of the critters are doing great. Got a couple of good rains and the grass has a nice green tint to it.
I took off for a week and headed to Texas.... Loved it! Spent the week with my favorite people on earth. Spent some time at the Stockyards in Ft Worth and even hit Billy Bob's.
Made a few laps around the track at the Texas Motor Speedway. That was fun!
Hope everyone has a nice weekend and Happy Father's Day to all of you dads and grandpas out there!
My dad is gone but I might honor him with a fishin' trip. :)
