I made a meat mixture of pork and beef, added a cup of beer and some Harleys dry rub...
blistered, steamed and peeled the anaheim peppers...
I browned the meat mixture before stuffing ( wanted them to cook faster) then added cheese...
wrapped a few in bacon...
into my wood burner with some hickory.... they smoked for about 2 hours at 250F.
served with fresh pico.....
They were tasty! The bacon wrapped ones were my favorite. :)

Wow, you've come up with another recipe that'll be trying. What kind of cheese did you use and are those Anaheim peppers very hot? I like pepper flavor but not the pain of much heat.

Mrs JP the peppers aren't very hot but you have to make sure to remove the seeds. I used a queso fresco mexican cheese but any cheese is fine.

Smoked stuffed anaheims are one of our favorites also. We always wrap ours in bacon. Did them once without the bacon and never did that again. We also use apple, cherry and mesquite with ours and sometimes toss in just a few oak chips. Neither of us are very big on hickory up here. But these are great little meals, appetizers and snacks. I hope everybody tries these sometime.
