More Crawdads n Bacon Wrapped Corn




One of my favorite finger food meals! I make this pretty often.
I season a pot of water with Swamp Dust, garlic, lemon juice, salt, cayenne peppers...



Then add smoked sausage and the tatoes...




I like to season the corn with olive oil, then sprinkle with cracked black pepper before wrapping in bacon. Sometimes I salt them too but for me, the bacon adds enough salt flavor.



Into the drum....




When the tatoes tender up a bit I add the crawdads...



next, the shrimp..



They cook fast!


Lastly, I add some crab legs to catch a bit of smoke and heat through...





I love bacon wrapped corn...


Served with garlic bread, horseradish sauce, garlic butter, cold beer and plenty of napkins..









I used to make this without crab legs but they are so tasty when smoked! 

It's been a mild winter here,  no snow to speak of. The drought is in full swing, I'm wishing I could take a bit of rain that some of you are getting hit with!
The cows are calving and all is going well. The rest of the critters are getting spring fever, me included. lol
I have a bad case of fishing/camping fever!

Fun stuff!!!

As a Northener we don't get crawdad boils up here so I've never been to one. That is until a couple of weeks ago!! My daughter and I were hunting hogs in Texas and got invited to a boil. Wow, that is some great eating!

Sure is good to see you posting on a regular basis again.

Oneeye, that's great!! Your trip sounds like a lot of fun! Glad you were able to try crawdads too! They are good eating. lol
Hope you had a nice time hog hunting too. I've never been but hope to one day.
