Smoked Salmon Benedict

With the cold weather here, I've been using a lot of the home canned goods I put away this year. Makes for a fairly quick and easy meal.
This morning I made sort of an egg benedict with some of the salmon I cold smoked and canned last Feb...

Went with two slices of whole grain toast...

heated some of the smoked salmon in butter, then topped the toast and sprinkled with a few scallions.

Topped with an egg...

Drizzled with hollandaise, more scallions, pepper to taste, and called er good. 

It really tasted good this morning for some reason. Seems like I only make eggs benedict when camping. I'll have to quit being lazy and make this more often. :D

The cold front hit. I'm sure everyone north of me is feeling the winter blast too!  The temperature said -11 when I woke up this morning. Quite a change from 70F on Friday!
There was a dusting of snow, maybe an inch. Not quite enough for me to make snowballs or snow angels though. :)

You know what would be a significant upgrade to your blog? A big button where we could beg for samples!

Yeah, it's been on the cold side. 27 here (San Jose, CA) this morning. Took 10 minutes to de-ice the truck.

Sounds like you're getting hit with the cold weather too. Shoot!! De-icing is no fun.

I'm thinking a big pot of shrimp gumbo might be on the menu for today. I'd send some to ya if I could.

Good grief Jeanie!!!!!!!!!.....Every THING you cook looks WICKED GOOD!!!!!!.....I love eggs benedict anyway but salmon NEVER entered my mind.......can’t wait to try!! happy New YEAR!!!....

I've never heard of salmon benedict Jeanie. I've had eggs benedict a few times in the past, and to me it is a classy way of having your eggs. I love it. I think the salmon would make it even classier. It sure does look good anyway Jeanie. Hope things are going well for you. It looks like you have slowed down on your posting a bit too. I'm going to have to scroll back and do a little catching up.

Keeping too busy here, it's been an insane 2017.
Hit by an ice storm in January, no electricity for 2 wks. Hit by the death of a loved one.... then wild fires.
I'm hoping the rest of the year smooths out. :)
