More Campfire Benedict




This breakfast is my favorite, whether at home, eating out or while camping.  The hardest part of the meal is whisking the hollandaise without letting the egg yolk cook before the sauce thickens.

First... a skillet of hash browns on the fire...


then the sauce...
three egg yolks, a squeeze of fresh lemon juice, butter and seasonings...



I whisk the egg yolks, a squeeze of lemon juice and add the butter, one TBS at a time, til the sauce has thickened...





I set the finished sauce off of the heat while cooking the rest of the breakfast....



This is the easy part, grill some ham, fry some eggs and toast english muffins...



Breakfast is ready!





I topped the muffin halves with grilled ham and eggs...




drizzled with sauce and added fruit...



I was so excited about diving into the eggs, I forgot to get any hashbrowns. 






Sittin' by the lake.... keeping one eye on the fishing poles.... enjoying the beautiful morning....savoring every bite of benedict....
I was a happy girl! :)



This is one of those "why don't I make this more often" meals. I'm actually one of those grab something quick to eat people when at home. I need to slow down and make this breakfast a regular.


The weather is crazy warm here. I'm not complaining, I love warm weather! The rattlesnakes are looking for warm places to spend the cool nights, so it's time to watch where you step. A dear friend was bitten a few weeks ago. The snake got her on the leg with one fang. She made it to the hospital and received antivenin. She's doing fine.
I stepped over a snake coming in my backdoor as I was heading out. Gave me a start! lol I kicked the snake across the deck and it got away before I could get to it. It's that time of the year....

If I ate all of the things you post, I would have a body shape like one of those onions in your "Dutch Oven Stuffed Onions" blog entry.

You are inspiring me to scrounge up a tractor tire rim for the backyard, just so I can try that onion dish.

Still looking for a dutch oven like yours at garage sales and flea markets. The old cast iron is so much better than what they're making now.

lol!! Thanks for the laugh Joe!
I really like the older cast iron too. It's hard to find locally, but I hit antique stores when traveling. Sometimes ebay has pieces, but I've never purchased CI online. If I see something good, I'll give you a heads up! :)

You do need a tractor rim too. :)
