Dutch Oven Stuffed Onions





These have turned into one of my favorite things to make while camping. They take just a few minutes to prepare ...... and 35 or so minutes to cook. The aroma of the onions baking drives me crazy, (they smell so good), but they are worth the wait!


I cover the bottom of the dutch oven with cubed potatoes, then cut two onions in half and hollow them out with a spoon. (Save the insides for cooking later).
The potatoes help keep the onions upright, and they are tasty too!


I make a meatloaf filling. My favorite is so simple....the recipe on the back of instant onion soup mix!


Stuff the onions and sprinkle with seasoned bread crumbs for a nice crunchy top.
Add enough beef stock to almost cover the potatoes...



Burn a few logs down to get a good bed of hot coals...



I place the dutch oven in the center and shovel a few hot coals on top...






then sit back and fish while the onions cook...



I rotate both the pot and the lid every so often...the onions take about 35 minutes.


They smell SO good. :) I love cooked onions though...

One of those camp meals that I need to make at home but never think about. :/

The weather has been insanely warm here. Almost 90 the last few days. I'm still getting okra and tomatoes from the garden.

These onions are pretty easy to make and kind of nice while camping. I love cooked onions in any form though. Hope you have good luck with them if you get the time to make em. Thanks for stopping by!

Clinton! I've been there. Someone told me there was a good Chinese restaurant in Clinton, we were traveling through and couldn't find it. Ate at the Sonic instead. :)
I've wanted to check out Foss Lake, that's not far from you. I'm in the NW corner of the state. Not much up this way, but I like the quiet. :)
