Venison Tri Tip



This was one of those livin' off the land meals that I enjoy. Makes me appreciate the time spent hunting and foraging this year. :)

Some of this years white tail deer...
I usually cut the tri tip up and either grind it or cube it. This time I left it whole.



I left a couple of the backstraps whole, cubed some of the meat for stews, burger, sausage, etc., and left a few roasts whole. This was one of two deer.


 Seasoned the tri tip with salt and pepper...



I haven't had the chance to make wine or jelly with this year's sand hill plums so I used a few of them out of the freezer, for sauce..






I started with sugar, a pinch of salt,, a splash of wine and that's about it...



hydrated a few dried morels from spring hunting....







sauteed the morels in butter and olive oil...added scallions and minced garlic...



I could eat a skillet of these on their own!



saved the tri tip for last. I knew it wouldn't take long at all. The deer field dressed at about 160lb so the tri tip wasn't very large. Bout the size of a big pork chop.



grilled over the fire for about 2 minutes per side and let er rest...







Morels, a few slices of venison tri tip topped with wild sand hill plum sauce...









One of the tastiest meals I've had in awhile. Maybe it was just the satisfaction of knowing where everything came from. :)

looks great. every year i've always wanted to collect morels i see around while working, just never pulled that trigger. i do have a mess of sand hill plums in the freezer for family to make jelly out of, still haven't got my hands into that ability yet either though... been enjoying the recent posts again, hope you have a good holiday season.

Hope you get the time to gather a few morels next spring. They are pretty special. Nice that you have them growing so close to where you work!
Maybe we'll both find a snowy day this winter to dig out those sandhill plums and make jelly. lol
Not sure why I keep putting it off, I love the stuff!
