Beef Short Rib Plate n Beans on the Fire





I slow smoke a lot of beef back and pork ribs on the fire when camping. Thought I'd try a plate of beef short ribs... just to see how they do.

Brought some meaty, 4 bone in short ribs...



Slathered them with bacon drippin's and seasoned with salt and pepper...
Then placed them on the low heat side of the fire.



 Had a pot of beans n ham slow simmering since breakfast...



Did a little fishing and added wood to the fire when needed.
Rotated and flipped the ribs every so often.







Stirred the beans and added stock when needed...







Smoked the ribs til tender. About 6 1/2 hours...




Also cooked a few tatoes and brats...








The beef short ribs turned out moist and tender. Will make these again for sure!









I still eat better when camping than I do at home!
Everything tastes better over a campfire. :)

Those look pretty good. I've only had short ribs once (cooked by a neighbor for a dinner party). They were sort of slimy with too much residual fat. I haven't had them since. However, yours look great and cooked perfect!

Sounds like they needed to be cooked longer to break down that fat. Hope you try them again Bushman. Good to see you!

Hey Cowgirl, it looks like you are faring well; i truly hope so. JP has rigged up a curing chamber you would love. I will have to get him to post some pics. He made it from a refrigerator. So far he's made some spanish chorizo that was so delicious and now hangning in it is a salami to noppa's (coppa's from a smaller portion i think) and something else,,,I can't remember. It's a real deal,,you would absolutely do...cause I know you,,,haha. He's been really into cured meats lately so that absorbs most of our time...take good care of you.

Cowgirl, I just want to let you know that you have been an inspiration for me. My hubby and friend built a smoker from a boiler. I never imagined that I would cook on it. With your inspiration, I cook on it regularly. Hubby has expanded our smoker to include a cold smoking area. Once again, we were inspired by you.
