A Chorizo and Egg Camp Breakfast





This was a fairly quick camp breakfast. I picked up some spicy chorizo from a woman who sells it in a small market. She said her favorite way to prep it was with potatoes.
So I gave it a try while camping.

Used the tractor rim. Also had a pot of pinto beans simmering for a later meal.



Browned my chorizo first, then added a few tatoes...



made divots in the meat/taters and broke a few eggs into them...



gave the eggs a bit of heat to set the tops...



heated tortillas and called er good.





I did sprinkle the top with cilantro and some cheese. The wind was blowing so hard, I had a time just keeping the tortillas nailed down.






I topped a hot tortilla with the spicy Chorizo, tatoe, egg mixture...







It was really tasty.. kind of spicy though. I will cut back on the amount of chorizo next time but will definitely make this again.




It was so quick and danged easy. I'm adding this to my camp cooks in the future!

Again! You nailed it. I like how you hollowed out the spots to put the eggs. I will remember that little trick. I do love chorizo, but none of my family cares much for spice so I'm usually limited to breakfast restaurants.

The chorizo was a bit spicy. Almost curled my hair. lol

Wow that looks yummy. Down here in Chile the love their chorizo and longanizas or hot dogs as we would call them. Also here they put eggs on everything in everything, even their empanadas. They do not do tortillas here at all! I found this to be a particularly mexican style that is not copied here in Chile.
Food here is very simple without sauce or gravy.
