Beef Short Rib Plate n Beans on the Fire





I slow smoke a lot of beef back and pork ribs on the fire when camping. Thought I'd try a plate of beef short ribs... just to see how they do.

Brought some meaty, 4 bone in short ribs...



Slathered them with bacon drippin's and seasoned with salt and pepper...
Then placed them on the low heat side of the fire.



 Had a pot of beans n ham slow simmering since breakfast...



Did a little fishing and added wood to the fire when needed.
Rotated and flipped the ribs every so often.







Stirred the beans and added stock when needed...







Smoked the ribs til tender. About 6 1/2 hours...




Also cooked a few tatoes and brats...








The beef short ribs turned out moist and tender. Will make these again for sure!









I still eat better when camping than I do at home!
Everything tastes better over a campfire. :)

A Chorizo and Egg Camp Breakfast





This was a fairly quick camp breakfast. I picked up some spicy chorizo from a woman who sells it in a small market. She said her favorite way to prep it was with potatoes.
So I gave it a try while camping.

Used the tractor rim. Also had a pot of pinto beans simmering for a later meal.



Browned my chorizo first, then added a few tatoes...



made divots in the meat/taters and broke a few eggs into them...



gave the eggs a bit of heat to set the tops...



heated tortillas and called er good.





I did sprinkle the top with cilantro and some cheese. The wind was blowing so hard, I had a time just keeping the tortillas nailed down.






I topped a hot tortilla with the spicy Chorizo, tatoe, egg mixture...







It was really tasty.. kind of spicy though. I will cut back on the amount of chorizo next time but will definitely make this again.




It was so quick and danged easy. I'm adding this to my camp cooks in the future!

More Campfire Surf n Turf




Another steak and crab leg cook at the lake. This is my favorite meal no matter if I'm at home or camping. I love crab legs and ribeyes!

Started a few logs of wood in the tractor tire rim...



This time I made a skillet of potatoes, onions, cooked bacon, minced garlic....then layered with flour, salt and pepper and cheese.
Poured milk over top, and let it thicken as it cooked.
I filled the skillet too full of tatoes and it bubbled over while on the fire. Made a mess but they came out tasty. (I should measure stuff instead of guessing)








Next came a skillet of mushrooms and garlic in butter.
Also heated a little pan of garlic butter...



Then the ribeye steaks, drizzled with oil and seasoned with salt and pepper..





Then I add the crab legs....




















Had a great time camping and even caught several fish. Loved the skillet of potatoes even though they simmered over and made a mess. I'll make em again...
