Catfish n Hushpuppies





While camping at the lake a couple of weeks ago, I fried up some catfish and made a batch of hushpuppies. They just seem to taste best over a campfire.
I actually brought these fish with me in case I didn't catch any...... I think that I must have jinxed myself cause I didn't have one single bite while fishing. :)

This was some catfish from fishing last fall.  I cut the fish into nuggets, rolled in a cornmeal, flour, salt, cayenne, lemon pepper mixture.


heated some oil on the tractor rim...



mixed up a batch of jalapeno hushpuppies.. cornmeal, flour, baking powder, one egg, milk, salt, cayenne, minced onion, minced jalapeno and whole kernels of corn.



fried the fish first,  lowered the heat in the pot by moving it off the fire a bit. Then fried the hushpuppies...








That's about it... I ate quite a few fish while hot off the fire so I didn't feel like eating much supper.


It was pretty tasty!



The temperature dropped into the high 20's and low 30's at night so the campfire felt really good.



It was SO pretty in the evening....





Later that night I stabbed a few pieces of leftover catfish and hushpuppies with a stick and roasted them over the fire.  Couldn't believe how good they were. I will do this again next time I go.



experienced my first "caveman style" hushpuppy. (yeah, it fell into the fire).  Much to the horror of friends, I stabbed the fallen hushpuppy, brushed it off and popped it into my mouth!  I tried to explain the latest caveman style cooking fad (cooking directly on hot coals) but they said that even cavemen had sense enough to put their food on a stick to cook.  :)




The moon rising over the water was SO pretty. Although I froze and didn't catch one single fish, I really enjoyed just being out there. :)

That is my favorite way to eat. Right out of the pot! SOmetimes when you're cooking for a bunch of folks it is the only way to eat because you're so busy prepping and cooking! Nice pics too! I haven't had good catfish in forever. You just can't get it up here. All they sell if those frozen nuggets and they are awful!

Cavemen were too busy on the Geico website to actually use sticks :)

Glad to hear you do that too Bushman, eat right out of the pot. They taste so good when fresh and hot. You're right about being the only way to get fed sometimes too. :)
I'd send you some fresh fish if you want. Let me know!

lol Mark! I seem to cook meat on a stick a lot. This was my first try for already fried catfish and hushpuppies. It tasted really good! lol
