A Jallelujah Jalapeno Bass on the Drum



I'm behind on posting (and other things too lol) but wanted to post a cook I did awhile back.
This was at my favorite little fishing hole. I mainly went for the quiet....parked my fishing pole and walked around enjoying the wild flowers.






I didn't catch anything until I brought in my line to pack up and leave. A bass hit as I reeled in....



It was a really nice evening. :)



I cleaned the fish that night and saved it for supper the next day.
Cut the ends off of some leeks, separated the leaves and washed them.
Thought about blanching the leaves in water but about 15 seconds in the microwave made them pliable.





Stuffed the bass with cilantro, garlic, leeks and limes then sprinkled with Big Poppa Smokers Jallelujah Jalapeno Seasoned Salt.


Topped with more leek leaves, rolled and tied....




Into the drum with some spicy rice.(minced onion, garlic, green chilies, tomatoes, chicken stock and some seasonings)











Looks better with a lime eye. :)

It was mighty tasty! :)
Loved the kick the Big Poppa dry rub gave the fish and the leek leaves added another layer of goodness.
Hope to make this again! (if I catch another fish) :)

I really like the idea of wrapping it in leeks! I can imagine they impart nice flavor!

I think you'll catch lots more fish Jeanie. The fish is looking pretty tastey. Hope everything is going good for you and you're getting around ok.

Thanks Rocco, I didn't eat the leeks but probably could have. They smelled incredible! :)

David they did smell soooo good and added a nice flavor to the fish. I plan on using them for other things.

Jeanie, that looks good. I have seen something like that with trout, but I'll bet it is much better with bass. Glad to see you are feeling better...

OH! btw....
You do know fishing is on the list of acceptable activities for rehab and recovery....;)Experience is how I know these things....LOL

Good to hear you're feeling better and getting some rain. My creek is up and down like a yo-yo it seems. We have had a lot of rain earlier on, but the last few days have been mostly hot and sunny. A lot of other parts in Alberta has had some real major flooding. High River, Canmore, Calgary and earlier on up north in Fort Macmurray. I really hope that kind of action stays away from here.

Mark thank you! I'm thinking of using these leeks in place of corn husks for a few tamales. Might work!

Rick I just need to be more careful and take better care of myself too. This sitting still is harder on me than anything. lol

I know that you know about fishing and recovery... this posted fishing trip was before my ambulance ride.. I'll tell the doc that you OK'd a recovery fishing trip for me. lol

Mark I'm glad to hear you aren't flooded out! I saw a few pics of one area in Alberta with stranded horses and cattle. Hope the weather dries up soon for you all.

I forgot to mention, your post on your home built drum smoker (via bbqlikeapro.com) was the one I found your blog through. I'm planning a build myself at about 2/3 scale compared to yours in order to make it more portable.

I've managed to get my hands on some old LPG tanks (yes, I'll be careful to purge them properly before cutting into them) and I plan to blog about it myself as the build progresses. Still gathering materials at this stage.

Yours is the most straightforward and effective design I've come across so far, and it keeps the cost down, which is great.

Your plan sounds great! I've seen small cookers made out of large tamale steaming pots with weber charcoal cooker bases but your idea sounds like it would be a lot more affordable.
Good luck with your build, would love to see pics when you get it going. I'll keep an eye on your blog.
