Lakeside Pulled Pork with Chipotle Slaw


Enjoyed a few days camping at the lake. The weather was beautiful and the moonlight was so bright at night....flashlights were optional. :)

I had smoked a pork shoulder the day before leaving, so I brought it along for a quick easy meal on the first night.

Injected with beef stock, garlic, onion and cayenne..
Rubbed with Harley's dry rub.






Into the BPS drum smoker .......




brought to an internal temperature of 195F..wrapped and let it rest




The pulled pork smelled sooooo good I couldn't resist giving it a taste with some vinegar Q sauce that smoking friend GTR sent from California. (Thanks Greg!)





I loved the sauce... had some twang and heat to it. Was just right! :)




I bagged the pulled pork and headed to the lake...




The burn ban is still in effect here, so campfires were not allowed. I had to bring my little charcoal cooker for meals.



I made some chipotle slaw while the pork heated....
Mix 1/2 cup of mayo
1 chipotle pepper in adobo sauce, chopped (you can use more)
some chopped onion
salt to taste
a squeeze of lime juice
and 1 bag of pre-shredded cabbage







The pulled pork sandwich....

It was a tasty quick meal for the first night of camping.



hmmm... just got home and I'm ready to go back! :)
