Eggs Benedict Camp Style

Think it's safe to say I make this for breakfast every time I camp out. It's gotta be one of my favorites!
Tastes so good over a campfire when the meal catches a bit of smoke but with the burn ban going on, I had to come up with another way to cook it.
Found this little folding grill for $9.00...couldn't pass it up!



The grill folds up really small. It's very compact and light weight...






I set it up on the picnic table bench, lit some coals and started the hash browns and hollandaise sauce...



I make my sauce first, it takes the most attention. Egg yolks, lemon juice, butter and seasonings...








next came the grilled ham and the eggs... I baste the eggs with the hot butter in the skillet to "set" the tops.



I toasted the english muffins last....




Time to eat... :)



Camp style eggs benedict, hash browns, and a few pieces of fruit to make the meal look healthy. :)








I kicked back and watched my fishin' pole, hoping the fish would wait until I finished breakfast. :)

That's a nifty little grill! Where did you pick it up?

Thanks David! I picked it up at Walmart when they had grilling items marked down for the winter. It was $9. Thought it would be handy for camping.
So far I like it!

Yes, because you absolutely needed another grill, ha ha. That is a pretty handy one, I need to get something like that for my office. That or I just need to leave a Smokey Joe there.
