Catfish on the Campfire :)

I did manage to catch a few fish while camping a couple of weeks ago. Brought some home for later and cooked up a few while there.

Built a good fire to heat the pot of oil...

seasoned the catfish nuggets with a mixture of cornmeal, flour, salt, lemon pepper and cayenne...

I thought about making hush puppies but went for fried tatoes, they were quicker and I was hungry. :) I coated some of the sliced tatoes with the catfish seasoning.

It was a nice evening...

I ate so many catfish nuggets hot off the fire that I was full by the time they were all fried. (one of the benefits of being the cook :))

After supper I set the hot pot to the side and threw a few more logs onto the fire...

The "Quacky" Family came by with two little ones...

They were soooooo cute! :)

The evenings by the fire were so relaxing. One of my favorite things about camping.... Good food, good friends and a lot of laughter.

Fresh caught catfish and fries over an open fire by the lake - it doesn't get much better than that.

Dang, I want a lake like that! Mine has houses all around it.
In the middle of a danged desert. Yep, that's California. We got the catfish, just can't seem to catch any. Your's look so good I went to the market and bought some. Sunday night dinner. Hope you get back there soon. Seems like that place is your spiritual center, kind of like my mountains. Hope you have a nice weekend. A. Chris

Shoot Chris, Sounds like your lake is a bit crowded. I feel for ya.
Wish you would start a blog so I could see pics of your mountains. :)
I do enjoy the lake when I can get off by myself. I see more people in the camping area in one day than I see in a month at my house. :)
I bet your catfish were tasty Chris! Did you make hushpuppies too?

Hope you are having a great weekend. I'm enjoying being at home where it's quiet. lol

Thanks for stopping by! :)

Great looking stringer, Fresh fish cooked over a campfire can't be beat.
I caught a few trout last week but spent most of the time co-ordinating the $4K replacement of the tranny in my pick-up. The cost per lb. of my trout was REALLY high! lol ;)
Hey, it was till good to hang out with old friends.

Dang Rick! Sounds like a costly trip. I feel for ya...
I had a flat tire on this campout. It was interesting how many times I heard.. "hey you have a flat" or friends who relayed the messege, "tell her she has a flat". lol I thought I could change it until I realized the tire was put on with an impact wrench. :(
Someone came to my rescue and changed it for me. lol

Really sorry to hear your tranny went out Rick. I bet the trout were tasty though. :)
