Chinese BBQ'd Pork and Smoky Fried Rice Over The Coals

This recipe is one of my favorites for pork! It's soooo good roasted over hot coals. :)

Here's how I butterfly a pork loin





Then I score the loin....



Make my marinade... (make a double batch if needed to cover the meat)
2 cloves minced garlic
one "thumb sized" piece of fresh ginger peeled and minced
3 tsp sherry
3 1/2 TBS soy sauce
2 tsp sugar
1 tsp salt
2 TBs honey
1/2 tsp five spice
and about 1/2 tsp red food coloring
Bagged and let it chill overnight...







This time I sprinkled the loin with Simply Marvelous Spicy Apple Rub for a nice kick.



Onto the hot coals ...



I flipped the loin over to roast the top too....



Added a bowl of rice with chicken stock and scallions to catch some of the smoke. When the rice absorbed the stock I covered the dish and let it sit until ready to make fried rice.





I drizzled asparagus with olive oil and seasoned with coarse salt and cracked black pepper..



The whole cook took 35 minutes....



The Chinese BBQ'd pork, smoky fried rice and grilled asparagus...



It was sooo tasty. One of my favorite meals. :)



I was a happy girl again. :)

I've never considered cooking a butterflied loin flat but I will now as this looks delicious and your presentation is outstanding.

Jeanie, this was one of the first things I made from your site. I take a pork tender loin and inject as well as soak.

Sprinkle with the Dizzy Pig Pineapple and throw on a hot grill. Mmmmm good.

I'm drooling now. Might have to make one this weekend...

Thanks Larry! The loin cooks so fast this way....and it stayed moist. Not sure if it was because of the marinade or what but the meat was tender and moist.

Bill that sounds great! I will try the Dizzy Pig too..
This spicy apple had a bit of heat so I used it sparingly..it was nice. :)

The loin cooks fast, kind of reminds me of a thick pork chop. :)
They are good stuffed and rolled too but I kind of like this method.

Beautiful color on that pork meat.

Unlike most people, I believe there are five flavors in life:

1. Sweet
2. Salty
3. Sour
4. Bitter
5. Smokey

You seem to recognize that. I've never thought of doing rice over coals, but that's a great idea!

Jeanie ... I do love the way you cook. It looks absolutely amazing ( but with you that is nothing out of the ordinary.)
Think I am gonna add that one to the Memphis in May hospitality table this year. The theme country is the Philippines. I think a side of grilled pineapple and plantain instead of the asparagus.
Wanna come and cook it? I have plenty of space available for ya. Trying to get Herb to join us too! I'll get him to bring coconut briquets.

I think this pork recipe would go well with what you have planned.
