Pecan and Applewood Cold Smoked Olive Tapenade

It's a big title for such a little bite. :)
I love this stuff... almost as much as I love smoked bacon wrapped bacon.


I cold smoked a couple of batches of black olives in the smokehouse right before deer season.
Actually the first batch went so fast a second one was needed. lol





Regular ole black olives work the best. Oil cured olives do not take on the smoke flavor as well.



I made some smoked garlic olives by combining the smoked olives, 2 cloves of minced garlic and about 1 TBs of oil in a jar. Shake well and keep chilled. I love these things too.....




For the tapenade I combine minced smoked olives, minced scallions, minced garlic, olive oil, coarse salt, cracked black pepper, sometimes capers. All amounts to taste.



I love this stuff! ...and my favorite way to eat it is sittin' on a saltine. (the tapenade...not me :))

That looks great, but I have to ask. Do you have an olive tree or use canned olives?

You know what I have been looking for a good recipe for Salteen Type Crackers. I have never been able to find one. Do you have one?
I actually had a friend (died trgically 5 years ago) who was a 5 star chef and he did not even know of a recipe.
Also, I bet that smoked salmon would go good with the olives .
Just thought I would ask. Merry Christmas.

I guess I need to put a smoke house on my get it done list. Many years ago dad and I made a cold smoker out of an old "ice box", finally rusted away.
My neighbor taught me how to cure/can green olives. The last batch is about gone. I will do more next year. If ya have access to green olives I'll send ya the recipe. I add dried red peppers (pepitos?) or garlic cloves. They are great! The jerky turned out great I posted a thread on the Brethren. Have a great week and if I don't talk to ya before, a Merry Christmas also.

Sure wish I could take a drive over and have a taste! I love black olives and so does my son. We could eat them by the handfuls!
