Venison for the winter...

The season isn't over and I have another tag to fill..... but it's a good feeling to have some venison in the freezer for this winter.

Should be good eatin' this winter.

LOL Every time I see pics of the deer hanging in the shop like that it reminds me of some horror flik I think I must have seen a long time ago. Good luck with the rest of the season...

Yep we had a quiet T-day at MIL. I smoked a bird in the BGE, on Sunday before so that we would have leftovers.... :)

I went through Western Oklahoma (left turn at Shattuck) coming home from Amarillo. That is some tough country.

I got a nice average eating size buck 15 minutes after shooting hours on Thursday. He was standing next to a much larger buck. The big buck seemed to have no idea what to think.

Neanderthal it IS tough out here. lol The winters and summers are both pretty harsh.
Congratulations on the buck... That's great. Average eating size is better than a tough ole big buck. :)

Hi Cowgirl.

I spend a lot of time in Northwestern Kansas--tough in a different way. Has the extremes but a softer edge out there on the prairie.

If the weather allows, my buck will hang in the garage for a week before I butcher, if it warms up, I'll part him out into coolers with ice, then separate the muscle groups and and vacuum seal the meat. Sometimes I add some marinate or spice before I seal and then let it sit in the fridge to age another week when I thaw it for cooking. What is left of last year's deer goes into jerky.

Population densities are getting high up here and chronic wasting disease is taking hold so I avoid getting into bone or spinal cord. Have they been testing in your area?

Any time I can fill a tag with one shot, I am a happy hunter. I love the hunt, believe in hunting, limiting the populations, love venison and loathe disrespecting the deer by failing to do my part well.

NW Kansas is pretty harsh too... I've not been up that way in a few years but I rememeber getting caught in a good snow storm one time. :)
Sounds like great plans for your buck. I'm sure he is going to be tasty! We haven't had the waisting disease out here but heard of it a couple of years ago in eastern okla...not sure if it is still a problem there or not.
