Corncakes n Sausage on the Campfire

Another favorite campfire breakfast...



I start the fried potatoes and onions first, then a skillet of sausage patties...



For the corncakes, I use...
1 cup of flour
1/4 cup of cornmeal
1 1/2 tsp baking powder
1/4 tsp of salt
1 tsp of sugar
1 egg
About 1 cup of milk or more if needed for a thinner batter
1 cup of corn
Chopped green onion



the first one never seems to come out round! :)



after the corncakes are ready, I fried a few eggs..











I'm not sure why I love these so much. I think they remind me of my childhood. Mom made the best corncakes. I loved them topped with a bit of butter and drizzled with maple syrup. :)





They're one of my favorite campfire foods. :)

Less the corncakes this is one of my all time favorite meals, but with them it sounds even better.

Do ya mix all of the dry stuff in zip bags at home? Then just add the wet stuff at camp.....
How many coolers do you take with you?
If it is the least bit warm, I seem to run out of room after the appropriate amout of "drinks" are loaded in the cooler....:)
I do enjoy corn cakes but never tried them with green onion. I'll have to try that next time.

I have a box that I keep camping dry goods in.. it contains flour, sugar, salt, baking powder, seasonings.. even dry beans and rice.
I just keep it stocked and ready to go.
This lake is a few hours away so I buy the food and ice at the last town I come to on the way there.
I have two ice chests.
The big one for food and a smaller one for beverages. :) Yeah Adolfs too. lol

It would save time to pre mix the stuff but I usually just grab the box and go.

Mmmmmm... my absolute favorite breakfast. I've never used milk in my corncakes; we use buttermilk and a little less baking powder.

I know what I'm having tomorrow.

I bet the fresh corn kernals were soooo tasty. I've made them with grilled corn too and liked the results. Not sure why I love these things so much, but I could eat them at least once a week. :)
