Campfire Benedict ....yes I make this too often :)

Not many camping trips when I haven't made this for breakfast. I love it! :)



It's all about sequence for me..I start with a skillet of tatoes and onions.





Next I make the hollandaise. It takes the most attention so I get it out of the way.

I start with three egg yolks, whisk in butter, one TBs at a time, then I add fresh squeezed lemon juice.
I forgot to bring a whisk this time so used a fork. By tilting the pan over the fire I was able to keep the yolks nice and smooth. (really important in campfire cooking I'm sure. lol )



Next I roast ham slices over the fire.... while my skillet of eggs slow-cook in butter. I spoon the hot melted butter over the tops to set.



Toasted the english muffins ....





ta-da... breakfast! :)



The english muffin topped with grilled ham, egg and hollandaise. Fried potatoes with onions and a bit of fruit.





I love this while camping. The wood smoke adds so much flavor to dish..



I was a happy girl again.... It didn't even matter that the fish weren't biting! :)

Cowgirl, I figured it out. We just need to clone you so that everyone can take you camping. You are one fantastic campfire cook. WoW!!

Everything looks great, even on the rainbow paper plate. I am sure I could be quite happy with that breakfast every now and again. (even every day)
