Five Spice Fried Ribs

I make these in my kitchen but wanted to cook outside today (no wind)...so......

I seasoned the spare ribs lightly with five spice powder. Made my usual hunka spam. Smoked the ribs at 295F with applewood for 2 hours.



put together my five spice salt (5 TBS salt and 1TBS five spice powder)
and my marinade for the ribs
5 whole star anise (you can use 1 tsp anise seed)
3 TBS sherry
3 TBS soy
1 tsp salt
3 tsp sugar
some scallions
minced fresh ginger ( about 1 TBS)
After placing the mixture in a measuring cup, I added enough water to bring it up to 2 cups.


After the ribs had smoked for 2 hrs I made a foil pouch and placed the ribs meat side down...then covered with the marinade and sealed tight.




Put them back into the Pro..... Added a bowl of rice in chicken stock for my fried rice.


Sprinkled the spam with brown sugar and cayenne then spritzed with whiskey.




Two more hours in the Pro, I checked for pull back on the ribs.



They were moist and tender and soooooo full of goodness. :)



I cut the ribs into pieces and rolled lightly in cornstarch....



then fried quickly until light brown...



I sprinked the fried ribs with my five spice salt and served them with fried rice...



I love em. :)
I should mention the marinade pretty much over-powers any smoked flavor but they are soooo good!

I love these ribs..the light crunch on the outside and the tender center. I love the five spice salt on a lot of things. :)

No wind here today but it's been 20 mph with 40 mph gusts for 3 days. :O Also no ribs so hook a neighbor up!!!

I love any kind of pork smoked with applewood. Gives it that sweet smokey taste. I can almost imagine how good those were.......Almost. :(

Cowgirl, now you're cooking like an island girl. Fried ribs are a fantastic treat. Your ribs look great and the fried rice, which we eat a lot of here on Guam, looks great also. Just the right color. Where'd you learn how to cook fried rice?

Thanks Anonymous! I've never been fond of spam until I tried it smoked. I love it with the cayenne brown sugar and a whiskey spritz. :)

I love fried rice. I have an old basic recipe that I use and then add whatever I have on hand.
I would love to learn the correct way to make it though.

Basically you got it. Fried rice is something that is cooked with leftover rice and whatever else you have. Your rice looks great. Especially next to those fried ribs.
Just a great meal.
I'll send you some other recipes from Guam, I'm sure you will enjoy.

I started to smoke spam also during long smokes. Everyone loves it (even those that hate spam). It seems our oldest boxer is the biggest fan of it though. Luckily that day i had about 3 pieces.
I love the fry idea. Thanks for the recipes and for the inspiraton.
