Wow Jeanie - your plate looks perfect - you do a great job frying fish. Is that just cornmeal? Our crappie fishermen are out in full force.

Always look forward to your "after" camping post! Looks awesome as usual especially breakfast with backstrap....mmmmmm

I love camping as long as it is cool enough to need a fire. I hate cooking over an open fire in 90 degree heat. Love the camping spot too.

I laugh every time I see a catfish on a stringer. When I was a youngster and My Dad would take me fishing, as soon as I caught the first catfish, I would stop, start a small fire, gut the fish and throw it on the coals (the skin keeps it moist and juicy). It used to drive my Dad crazy, especially if we were in a boat because he would have to drop me off to cook. He never could understand why I couldn't wait till the end of the days fishing to eat. Those days and Dad are long gone but the memories live on.
Thanks for the laugh and the memory.

Thanks Larry!
I made a mix of cormeal, flour, cayenne, salt and lemon pepper. Used it on the tatoe slices too.
I envy your crappie fisherman. :)

Hope all is well with you!

Marc, thank you! I just fried them in a cast iron skillet over the fire.

Interesting arsenal in the tackle box, and all organized, too. Must be a girl thing.. :) My tackle box looks like a bomb went off several years ago. Nice looking fish and grub... I have never had benedict for breakfast when I've been camping, but then again....Oh Well!!
I'm a purdy good tracker, could you leave a trail of bread crumbs next time...:)

Nick I hope you get to go soon! :)
My ipod has a big mixture of everything..
I have old rock, blues, some country, lately I've been listening to a lot of Joe Bonamassa.
I'm always open to suggestions. If you have a favorite, I'd be interested!
I just looked at my ipod.. I have everything from the "Red Dirt" Oklahoma bands to Stephan Grappelli. lol
I love music. :)

Thanks Nick. :)

PaulB it depends on the weather.
There is a picture of my tent in the "camping in Texas" post in my favorites list.
Hope all is going well with you!

Haha Rick! You should have seen the tackle box before the campout. It was too heavy to carry. lol
I even have more than one of them.

You need to try that campfire benedict.. the smokey flavor is hard to beat. ( but then I like everything cooked over a campfire)

I'll leave those crumbs next time.
Thanks!

That looks like a good time! I never learned how to skin a catfish--I think it's because Daddy didn't like to do it :O) Oh, how I love fried fish, that and smoked are my favs.
So, you're having some decent weather there I assume.

Thanks Mrs JP, it was a nice short trip. :)
I'm not fond of cleaning fish either but they are sooo tasty. :)
It's starting to warm up here but not as green and pretty as your area. Your yard looks beautiful! :)

It was cold but so wonderful.
