Beef Ribs & Bacon Wrapped Corn

Smoked beef ribs.... gotta be one of my favorites. :)

drizzled with olive oil and seasoned with kosher salt and cracked black pepper...
Into the smoker with some hickory.




The bacon wrapped corn bastes the ribs...




had to toss a spam in too. :)













the smoked spam with a cayenne, brown sugar, whiskey glaze...













They were sooooooo tasty!

The ribs took almost 5 hours and the corn 3 1/2 hrs. I put the ribs in first at 275F for 1 1/2 hrs....then raised the temperature to 295F when I added the corn.

When I do corn alone, I smoke them at a higher temperature so the bacon will be crispy. I kept the temperature kind of low this time so the ribs wouldn't cook too fast.

Completely too damn funny that you made SPAM. When I was watching the NBC national news tonight and they were showing SPAM being airdropped to that drifting cruise ship I literally thought, "Too bad they don't have Jeannie there!"

Oh my gosh oh my gosh Everytime I think it's a safe time to look at your blog, you do this!! That is a great looking plate. I hardly ever make beef ribs but I'm gonna smoke some dang soon. Thank you again for the great pictures and inspiration, your wonderful!
