Huevos Rancheros with Beef Cheek Hash

Another breakfast on the horizontal woodburner.. (it just tastes soooo good cooked outside!)


I wanted to use some of the beef cheek meat I had saved while making
beef cheek tacos

I started by frying some potatoes in one skillet and some onions with garlic in my sauce pot..



added peppers, tomatoes and seasonings to my sauce and let it simmer..




mixed in my cooked beef cheek meat with the potatoes. The beef cheek meat already had onions and peppers...





fried a few eggs...







warmed some tortillas in the spicy sauce...




The hot tortilla topped with sweet beef cheek hash, a fried egg and spicy sauce. I did add a bit of cheese and sprinkled with cholula.

Then washed it down with a cold beer...



It was my supper.. lol I didn't really drink a beer for breakfast. :)

Are you sure you did'nt have a beer for breakfast Jeanie? You say it like there's something wrong with that. lol.. It might be morning in Oklahoma, but I'm sure it's gotta be noon somewhere. Nice looking feast anyway.

I was about to be impressed - until the last sentence :-). It was still a great supper and I'd eat it for any meal you'd cook it - you are the queen of campfire cooking.

lol Mark, I'm sure I wouldn't be able to get anything accomplished if I drank beer for breakfast.

Haha...Larry, I'm not that tough. I think a beer for breakfast would put me right back in bed for more sleep. :)
Thank you... I think I'm going for one more camp trip this weekend before cold weather hits.

What a fantastic breakfast, even at dinner! I like how you warmed the tortillas in the ranchero sauce.
