Pulled Pork Pie

I have been enjoying my smoked pork stash from the Battle of the Butts
in sandwiches, rellenos and wrapped in hot tortillas..

It was time to try a pie.
Actually I was being lazy and didn't feel like cooking.. this is an easy meal to throw together.
Smoking it in the Memphis Pro made it even that much easier on me. :)




I lined my cast iron skillet with sliced potatoes, then seasoned them with salt...




filled with pulled pork and minced onions...





drizzled with a hot spicy Q sauce....



topped with shredded cheese....




Added anothe layer of sliced potatoes, sprinkled with Harley's dry rub....


dotted the top with butter and into the Pro with hickory...





I let the pie smoke for about an hour, checked for tenderness in the potatoes....



It was pretty tasty! I added more hot Q sauce to the top before eating...



One thing I would do is add more butter to the top...the butter covered potatoes were tender, the others dried out a bit. Over all I liked it. :)

How do you get those taters to grow with flat sides. Out here they are kinda round, must be an Okie thing :) As usual great looking grub. It is over 100* here today, but getting cooler by the weekend. Looking forward to Fall.

Sounds like you are really getting the heat. Hope the weather cools off soon for ya.
I've been wearing a jacket in the evenings while doing chores...it's not that cool out, I'm just used to hot hot weather.. 80s feels cold. lol

Marc, thank you! I wish the some of the top potatoes would have been more tender but I think adding more butter will help.

that not only looks/sounds delicious but is maybe the most inventive Q dish i've seen in a long time. did you come up with it all on your own? simple but amazing.

It's my recipe..not perfect, but it tasted good.
All the stuff I post here is mine unless I post where it came from.
If you try the dish, the top taters need to either be covered for awhile with foil or more butter added to keep them tender.
