I have been looking through your site...again...and I have a question. Do you have a really good recipe for a whole hog marinade and injection? Doing a hog roast at an impromptu family reunion this coming weekend. So I am going to the best source I have found on the net for cooking hogs.

I am thinking of a pot of BBQ along side the pig on the rotissary for those that want a pulled pork sandwitch....could be good...

I've marinaded whole hogs in a mixture of orange juice, lime juice, garlic cloves, coarse salt, fresh ground black pepper, oregano and cilantro.
Make 1" slits into the meat with a knife and shove the garlic cloves and spices into the openings.

If the hog is very large though I prefer just to inject. I use a beef broth spiced up with garlic powder, onion powder and hot sauce (tabasco works well)
I taste the injection sauce before injecting..you can tweek the flavor to suit you. I use the powders so the injection needle will not get plugged.

I inject the hams and shoulders, then rub the whole hog with oil, season with kosher salt and cracked black pepper. You can sprinkle with a dry rub but make sure it doesn't contain too much sugar...the sugar will burn.
After the hog cooks... let it rest for at least 20 to 30 minutes so the juices will redistribute.

I like to serve the pig with several kinds of Q sauce.. A Kansas city style sauce, Texas sauce and a Carolina vinegar sauce is good.

Another thing I like to make is a finishing sauce...
1 cup cider vinegar
2 TBS brown sugar
1 tsp Tony Chachere's seasoning
1 tsp black pepper
1 tsp red pepper flakes
disolve sugar and add rest of stuff...then serve over the pulled pork. or let folks drizzle over the pork.

The Hog Roast was a HUGE success...sounds like we will be making that event an annual project.

The hog was about 110 lbs dressed, and cooked for 12 hours at 250 on a rotisserie Cooker. Definitely going to have to build one. The marinade that you shared was perfect. No one went home Hungry...I believe we served 50 + people.

No for the left overs. I am now looking for a good BBQ Sauce for a pulled pork recipe.

I've not found a favorite BBQ sauce recipe...I seem to be hooked on Billy Sim's Boot Kickin' Hot Q sauce (from Oklahoma)... It's my favorite one right now.
There are so many Q sauces out there to choose from, I'm sure others are just as tasty.
If you come across a good Q sauce recipe please let me know!

Shoot...now that I think about it, I have a recipe sent to me by a friend. I'll see if I can find it!
