Some Deer Camp Food

Spatchcocked Hickory Smoked Turkey with the Trimmings

I was able to put together a Thanksgiving meal Thursday with "deer camp" going on at my house.


I spatchcocked and brined a turkey in a mixture of water, kosher salt, sugar, red pepper flakes, onion, garlic, and black pepper. I let the bird brine overnight....




Then placed sliced smoked sausage under the skin of the turkey, rubbed the bird with butter and seasoned with cracked black pepper and kosher salt....



Into my drum cooker with some hickory.....









The smoked sausage makes the meat extra moist and tasty....







I made some smooshed potatoes, onion/garlic pan fried corn....



dressing and broccoli/rice casserole....



pea/bacon salad....



other stuff......




I couldn't eat half of it but wanted to put at least a spoonful of each on the plate....






My deer hunting friends were happy so I guess it was a hit. :)

Saturday

Hope everyone had a great Thanksgiving! I smoked a turkey on my drum and made plenty of side dishes. Hope to post pictures when company goes home.
I'm still in the middle of deer season and my house is "deer camp" for several friends.
Doing lots of cooking, eating, drinking, hunting and laughing.


Having a cookout tonight..not sure how many people will be here.... Guess I need to get busy!

Oh yeah... I got a deer yesterday too.

Life is good! :)

Thanksgiving

Deer season is still going on here... Some of my hunting friends are here for the rest of the week and I plan on smoking a turkey Thursday. (if all goes well. :))

I have so much to be thankful for. My health, family, friends, a roof over my head and food on my table. What more could a girl want. :)

Day 2 of deer hunting

Well, I didn't get a deer on day 2, but had a nice time anyway....

Came home..... made a batch of smoked olive tapenade.... enjoyed a bubble bath and a glass of wine. It was a nice ending to an already fine day. :)

Sweet Heat Pear and Raspberry Jalapeno Smoked Shrimp

That's a tuff one to say three times fast.

In a recent spice exchange, I received a bottle of Raspberry Jalapeno Sauce from friend.. Beer-B-Q in Kansas City and a bottle of Sweet Heat Pear Pepper Sauce from Phubar in the Netherlands.

I decided to try both sauces out on some of my shrimp....







First I brined the shrimp in salt water for a few hours, then dipped some of the shrimp in the raspberry jalapeno sauce. Wrapped some of the shrimp in bacon and brushed the skewered shrimp with the Sweet Heat Pear sauce...

I smoked the shrimp in my drum at around 295 degrees...using some olive wood.












I brushed the Sweet Heat Pear sauce on the skewered shrimp before serving too...


The Raspberry Jalapeno spicy smoked shrimp....

They were sooooo tasty!

Can't wait to try the sauces on other things. :)

This one was a bit of a challenge....... Smoked Chicken and Veggies with Roti

A smoking friend in the Netherlands named Phubar sent this recipe for me to try... It was written in Dutch so he translated it before sending. There were no amounts, just a list of ingredients and some pictures.

Normally the chicken is simmered in the sauce, but my friend suggested I try smoking the meat and veggies.


Making the roti...
I chopped some almost-tender split yellow peas until fairly fine....




Made my roti dough...


Filled a ball of roti dough with some of the peas....



pinched the dough closed...




twisted the top.....


rolled out....



and fried....



The sauce ingredients... tomatoes (crushed and whole), celery, garlic, onion, cumin, masala, boiled eggs, cooked potatoes, and some habanero pepper. Also added a bit of water and a maggi cube.







While the sauce simmered I marinaded the chicken, seasoned it with a dry rub and smoked...



I seasoned the potato slices with dry rub and grilled along with the beans...






The smoked chicken, grilled potatoes, beans, spicy sauce with boiled eggs and roti....








To eat, you tear off a piece of roti, place chicken and veggies inside then top with the spicy sauce. Like eating a taco.





It was very tasty and I hope I can figure out how to make it again! :)
