Smoked Beef, Chicken and Pork Tostada

This is some more company food from Memorial weekend....

I seasoned some chicken, beef chuck slabs, and pork hunks (had to skewer them) with olive oil, cracked black pepper and kosher salt...
Placed them in my drum with a small amount of mesquite...



Made some fresh pico de gallo...


Picked some fresh lettuce....



Smoked the meat for about an hour in my drum cooker...


Heated fresh flour tortillas.... I like them crispy for tostadas...






Started building.
First a layer of refried beans then some of the smoked beef....



Smoked chicken....


Smoked pork....



A bit of cheese....



The fresh lettuce and pico de gallo...



It was pretty tasty!



Again, my company didn't complain... woohoo! lol :)

Spatchcocked Hens and Smoked Spam

This is just some of the food I cooked during Memorial weekend.


I spatchcocked a couple of hens, placed butter under the skin and covered the outside with butter. Then seasoned with kosher salt and cracked black pepper...






Placed them in my drum cooker with a bit of mesquite...


Scored a couple of spams......






After about an hour of smoking, I brushed one spam with chipotles and adobo sauce. Then sprinkled the other one with brown sugar and cayenne, and spritzed with crown royal.




They were pretty tasty and didn't last long!











Time for a trim

First I need to let you know that my hair is pretty much wash and wear. I can jump out of the shower and let it dry in the breeze. No cutting, curling, coloring, or treating with chemicals.

Once or twice a year I head to my favorite hair salon for a trim.
My hair is long........when it starts getting in my way I take my scissors out to the pasture and remove a few inches. :)

I leaned over to the side and snapped a pic...



the bottom..... it was even, the breeze was blowing it around. lol









It's still long...probably too long. It's just above my waist. I'm good for another 6 months or so. lol

Cloud Watching (with help)

Some interesting clouds pass by my farm fairly often. I enjoy watching them change shape....
This is in the pasture behind my farm.

They're pretty sure I'm just there to pet them......

Blooming Yucca

I went for a short drive, looking for yucca in bloom.
These are in front of my house... the view from my porch.





This is the pasture on the south side of my house....


On down the road a short bit I hit the jackpot....



Bloomin' yucca as far as the eye could see. :)

I love this time of the year!

Crawdad Boil

I cooked up a batch of crawdads for one meal this weekend. It looks like a lot of work but
a crawdad boil is an easy way to feed a crowd with not much effort. :)

I decided to add a few crab legs to the pot....just because they are one of my favorites.






I seasoned the pot with crab boil, added salt, cayenne, lemons, garlic, onions, smoked sausage, new potatoes. hmmmm, I think that was all.


Added some corn then the crawdads....



Tossed in the crab legs and shrimp....



Pouring the feast onto the table....



It was steaming hot...




Served lots of garlic bread, garlic butter, cocktail sauce and plenty of paper towels...


This was not my plate, I stood by the table and snacked. :)


Everything came out really tasty, my company seemed to enjoy the food. :)

Spring is in the air

One of my favorite things about spring....the yucca in bloom. :)






The sage and yucca smell wonderful.



The indian blankets are in bloom too..








I enjoyed watching the sun set. The sweet smell of the pasture was intoxicating. :)
