Venison Chili

I was able to process the buck I got the other day. I cut a few roasts and steaks, then made burger...
It's nice to have meat in the freezer for this winter. :)






















I browned some of the burger with spices and onions...


added jalapenos, tomatoes and beer....

then let the chili simmer all day....




I sprinkled the top with some of my smoked cheese and minced jalapenos.
It was tasty and warmed me right up. :)

As a native born Texican, I love chili, especially this time of year. My traditional goto chili recipe is Lady Bird Johnson's Pedernales River Chili - http://www.lbjlib.utexas.edu/johnson/archives.hom/FAQs/Recipes/chili.asp

But recently we had chili Mondays at work where we all took turns bringing chili for lunch. A coworker of mine brought a brisket chili that was AMAZING. I will get that recipe out of him one of these days.

I bet ya that did more for your cold than the maggi's. I am gonna have to give that brisket recipe of Tim's a try. I have about 10lbs of briket in the fridge from today's comp.

Just as fantastic and spectacular as ever Jeanie. Hope you saved some stew meat as well. Nothing like a good serving of venison chili to warm the belly and bones on these cold late fall and winter days. One of these winter type storms is bound to get you soon and then swing on up here and get us.

Dave, that sounds like a nice one!
This was a 10 point but only field dressed at 150. My 8 point last year was bigger. I'm happy though. I got another one yesterday so there's more meat for the freezer.
