My Fatty Piston

A fatty is a chub of sausage, (usually a 1lb chub) cooked on a smoker. There are so many options on how you can prepare your fatty....stuffed, unstuffed, wrapped in bacon, sprinkled with dry rub.... it's endless.
One fatty recipe is the Bacon Explosion, made popular by the BBQ Addicts. their fatty contains bacon on the inside as well as the outside...thus the "bacon explosion"


Normally fatty fillings are sprinkled on top of a rectangle of sausage and then it's rolled up. I decided to make a "fatty piston"for my filling.
I wanted to try out my new fatty piston which was inspired by a talented smoker named Grillinski, he came up with the idea. Grillinski made a piston with a wooden disc and an arrow shaft for the piston rod.

I just made mine out of schedule 40 pvc.



To try out my fatty piston I made some corned beef hash... sauteed onions and garlic in a bit of oil, added corned beef, salt and pepper.






Then I added cheese and minced jalapenos to the filling....
and let it cool.






My piston.....






I place the piston on some plastic wrap.... then start filling



I tamp down the filling as I go...














After filling, I wrap the tube in plastic wrap and let it chill in the fridge...


I roll my spicy hot sausage out in a large plastic baggie....




Cut the top of the baggie open....




Shoot the filling onto the sausage using my fatty piston....




then use the plastic to fold the spicy sausage around the corned beef filling....




I made a bacon weave......



Roll the bacon weave around the corned beef hash stuffed fatty......let it chill until time to smoke.







Into my drum smoker for 4 hours.......









The spicy hot sausage fatty, stuffed with corned beef hash and wrapped in a bacon weave...











It was tasty and I love my fatty piston! It was fun to use..... I'll think up some more stuffings to try.



Now if I could figure out a way to make tortillas with my drill press maybe I could get some sleep at night. lol

That's a pretty interesting thing to do with a bunch of different things Jeanie. Weaving bacon? That is going to be an interesting thing to simply fry up all by itself too. All the other goodies are going to have to wait until I find the time and a smoker. But I would probably kill just for taste of that. lol

Cowgirl,
That is a work of art. I love the weave. What about a venison loin, with a rolling cut so it is flat, a layer of garlic humus spread on it and then your piston stuffing. Wrapped in a bacon weave. The possibilities are endless. PS I tested my smoker last night. Works great except my burner won't go low enough wants to be above 200 degrees so I need a diffrent one. Goose jerky is resting in fridge right now.

lol Mark, No need to kill for it, I'd send a bacon weave wrapped fatty to ya! :)
It was a pretty tasty combination of ingredients....but you can never go wrong when wrapping something in bacon. lol

The fatty piston worked great and it was fun to use. I'm thinking about other uses for it..maybe stuff meatloaf before smoking. There are so many options as far as fillings go.

Big Dude, Thank you so much! The fatty was so tasty. I made a sandwich with a slice of it the next day. I think it would be good with a poached egg on top and drizzled with holandaise too. :)

Sap, it's all pvc... two pieces of pvc pipe, a pvc disc, (I cut it to fit) and a pvc cap that fits in the palm of my hand. :)

I smoked it on my drum and tried to keep the temperature around 290. I mainly watched the bacon... I like it a bit crispy. :)

Your rolling tricks are a step above the self taught ones I've come up with. I really picked up a few tricks here, I must not be an old dog just yet, eh?

I loved that piston idea when it was on the forum, just haven't gotten around to making one.

What do you mean getting around to making a cook book. It's right here. Unfortunatley your not cashing in on it. Food Network is missing out on one hell of a show. They don't have this one. Self sufficient cowgirl cooks and lives like most of us dream of. I can see a tin coffe pot steaming on a fire next to a bacon wrapped fatty, boots and spurs and a coyote howling in the distance. I am going to make a fatty what a great idea! the list of possible fillings is endless! I am going to take my jerkey shooter apart and use the tube and plunger for the fatty press. I think it will work ok. guess I will find out!

I use no tooth pics. It takes about one pound of bacon to wrap the fattie and I just roll and tuck in the sides as I go.
Laying the bacon weave out on a sheet of plastic helps a lot...then I use the plastic to help roll and shape as I go.

I made the piston from potable water grade pvc.
The larger tube is 2" in diameter and it's 8" long.
The smaller tube is 1" in diameter and 11" long.
I glued a cap on one end to fit the palm of my hand and glued a plastic disc on the other end of the piston to push the filling out.

I roll the sausage inside of a one gallon baggie..and they are about 10 inches wide. SO I do not fill the piston all the way with stuffing.. I fill it with about 6 inches of stuffing.
(hope that makes sense. lol )

The filling is apple & chorizo dressing with liberal amounts of cajun seasoning.

Looks good. I am going to have to try that. Once you should try is a pizza fatty. Just use pizza stuff for the filling and make your fatty. Then, I made pizza dough and wrapped around the fattie when it was done. Then put back on the smoker for another 20-30 min at 350 until dough was golden brown. Very good!

Hi Bill!
Yes the larger piece is 2" in diameter and the inside smaller "plunger" is 1" pvc with a plastic disc attached to one end and a pvc cap attached to the other end.
You can make them any size.
