A Mug of Corn Chowder

With cooler weather here, I've been in the mood for something to keep me warm in the evening.
A warm mug of corn chowder will have to do. lol


I crisp up about 6 pieces of bacon....



saute some onions and garlic in the bacon drippings.....




Add a bit of flour to the onions and cook stirring constantly for a few minutes...



Then I add 3 cups of milk, one can of creamed corn....2 cups of cut corn. (grilled corn is great)



In a separate pot I cook some cubed potatoes until tender.... then drain and add them to the pot.






Put about 3 TBS of butter into the chowder and let it simmer on low until thick and bubbly...

Add salt and pepper to taste...



In a skillet I saute some garlic in butter....



I toast some bread strips in the garlic butter....the sprinkle them with basil, kosher salt and oregano.




Crumble the crispy bacon on top and add a few chopped green onions....




The chunky corn, potato, bacon chowder.....




It's a nice way to warm up in the evening. :)

That chowder sure does look good Jeanie. If a man such as myself, living in a little shack near the north pole, decided to make a larger batch of something like that, would it be easy to preserve something like that in canning jars somehow? Is there a simple process for all different kinds of things like that? I suppose that if it were cold enough outside I could freeze it. And soon, it will be cold enough outside to safetly do that.

Beautiful! Nothing smells better than bacom and onion cooking.

This is such an easy recipe for chowder. Will save it in my database.

If a man, such as yourself, living in a little shack close to the North Pole wanted to make a big batch for later... you could do it. :)
The chowder does not can well, but you could freeze batches of it. It won't have the same texture as when fresh but the flavor should be fine.
Some soups with milk or cream to not can well.
There are other soups and chilis that can well. I will post some of those recipes for you if you are interested. :)

So glad to hear you are settled in. I imagine it's wonderful out there!

I agree.. nothing better than the smell of bacon and onions. :)
I hope the chowder works out well for you. You can add as much butter/potatoes and corn as you like.
It's one of my favorites when the weather turns cold. :)

I'll definately get some recipes for you Mark! It's nice to have a few jars of food in the pantry.. kind of the original "fast food". Just heat and eat. :)

Ver Very Nice Jeanie! We usually do this dish after having a big ham dinner. Then we add ham, 2 cans of whole corn, 2 cans of creamed corn, 2 cans of evaporated milk, onions, garlic, celery, potatos, and then we top it with bacon and green onions... Next time you smoke a ham, add it to the mix, I think you'll love it!
