Mesquite Smoked Beef Indian Tacos

I smoked some boneless beef ribs in my drum using a small bit of mesquite....






ok...two are missing, I had to taste them. :)



Then I made some fry bread using

2 cups of flour

1 TBS of baking powder

1 tsp of salt

1 TBS of lard

then added about 1/2 cup of warm water

kneaded and let it rest covered for 30 minutes...




Hand flattened the dough into rounds, leaving the outside edges high...



Fryed til golden on both sides....








Made some refried beans

I sauteed some onion and garlic in lard, added cooked pinto beans and smooshed them while frying.... then seasoned with salt, pepper and cayenne.








I topped the fry bread with some of the beans and smoked beef....




Added cheese.....



lettuce, and fresh pico de gallo......




It was pretty tasty..... :)

I got about 5 big rounds out of that fry bread recipe. I probably should have made them smaller so I could eat a whole one. lol

wow that looks sooo good! im going camping this weekend so i am going to browse through your blog and find something good...something good for the cold...brrrrrr its cold up here! my tent, camping gear, etc is always in my truck. All i have to do is figure out the food thing,shop and get the heck out of here!!!!!! hope you have a great weekend Jeanie!Ill let ya know what i end up making. Cant wait to be with Mother Nature again..i miss her..lol.

Wow.. That looks delicious.What time is dinner? Add a few smoked japs and a big Margherita to wash it all down.. Yummy!!

Gotta give ya credit for only losing two of the ribs to a taste test....beef ribs only last a few minutes off the smoker around here.
You're tacos look VERY tasty!! I'll have to throw side of moo on the smoker and give em a try! :)

lol Gene, aren't ribs so tasty hot off the smoker! :) I had to test a couple to see if they were edible.

I've seen the beef ribs you smoke, I can see why they disappear so fast!
