Drum Chicken and Twice Baked Potatoes

I am behind in posting some of my pictures. This was a cook I did for company at least a couple of weeks ago.
I brined the chicken in a mix of water, kosher salt, pepper corns, garlic, 1 bay leaf and some red pepper flakes.



Heated my drum to 315 and added some hickory.....







I made my twice baked potatoes and added them to the drum after about 40 minutes...







Everything took close to 1 hour and 15 minutes.



The smoked chicken, twiced baked potato, cantelope and salad...



It turned out moist and tasty!

I don't know how you do it Jeanie. 2 minutes ago I was dreaming about prime rib, and now, I have chicken and twice baked potatoes on my hungry little mind. This is drivin me crazy Jeanie. lol. It looks perfect.

Since I started brining my chicken beore smoking it, I've never done it any differently. Juicy is not the word.

I agree, brined chicken is soooooo tasty. lol It's hard to go back to regular chicken. :)

I've been hooked on brining my chicken for years. I think I'll try adding the red pepper flakes to mine.

Wow! That looks fantastic! I have to grill a bunch of chicken for a family reunion this weekend, and now I think I'll definitely brine it all before hand. Looks delicious!

YD, me too! One of my favorite side dishes. Smoking them adds a whole new level of flavor too. :)

Where would some one like me find a food grade drum in somewhere like Bellingham Wash. Everything is plastic in Vancouver

I'm not sure... but a lot of folks have been getting them from Craigslist. You might keep an eye out there or even place an ad.
