Mesquite Smoked Brisket with Cactus Salsa

I smoked a brisket this weekend on my horizontal wood burner using a bit of mesquite..

Used a simple rub of kosher salt, cracked black pepper, onion and garlic powder.









Smoke at a temperature of 275 for about 8 hours...




I let the brisket rest for 30 minutes after the smoke....


It came out so juicy and tender, melt in your mouth tender. :)



The smoke ring was nice and thick...






Heated a flour tortilla and started piling the brisket on :)



Added my cactus salsa and a bit of lettuce and called it good.


Came out really tasty!

I wondered if they have much smoked food in your area of Canada. Briskets are really popular down here. Easy to smoke and they can be sooooo tender and tasty.
Hope you get to try one sometime. :)

Thank you Ozark!
I make it a lot like fresh pico de gallo.
I cut up cooked cactus. (if you use canned it needs to be rinsed)..then add minced onion, 1 clove of garlic minced, minced jalapeno, some cilantro chopped...a squeeze of fresh lime juice and some salt and pepper to taste.
I do not measure anything, just eyeball it.
