Quail, Catfish, Brussel Sprout and Wild Rice Smoke

I probably should have posted this on two or three posts... it's kind of picture heavy... sorry bout that!

I wanted to smoke a couple of quail but didn't want to fire up the smoker for just two little quail.. I ended up with a drum full of stuff.

I got the quail last season...the catfish were some I caught in the fall.

First I marinade the quail for a couple of hours in a mixture of olive oil, soy, garlic and sherry....




Gathered more wild onions...


Stuffed the quail with wild onions, sprinkled with kosher salt and cracked black pepper...then wrapped in bacon...


I seasoned the brussel sprouts with olive oil. kosher salt and cracked black pepper...also wrapped in bacon.


The catfish marinaded in a mixture of water, soy, brown sugar, kosher salt and hot pepper sauce...


I used a long grain/wild rice mix and added olive oil and chicken broth.... this went into the center of my drum where it is the hottest. I put the rice on about 15 minutes before everything else....
Used a bit of mesquite for smoke.








After 45 minutes, I covered the rice with foil....
The whole smoke took a little over an hour.

It turned out pretty tasty!!

That is a very interesting concoction of goodies Jeanie. I don't think I've ever had quail or catfish, but it all sure looks good. I can surley see me wrapping some bacon around a brussel sprout in the near future.

I really like quail and the smoked catfish is good if it's marinated. lol
If you like brussel sprouts, you might like them wrapped in bacon. They definately still taste like brussel sprouts, but the bacon adds a lot.

Hope you get to try catfish and quail sometime. :)

You are a never-ending wellspring of tasty ideas! Even with the bacon, though, I still don't think I could choke down Brussels sprouts.

They do still taste like brussel sprouts so I doubt you would like them. :)

I've got the opposite issue - love brussel sprouts, hate bacon (I know - I can hear the gasps from whereever you are!)....however, I absolutely loved the bacon wrapped corn on the cob from the smoker.

New to smoking - and you've been a wealth of inspiration. Don't plan on being "new" too, long!
