Smoked Beef Ribs and Bacon Wrapped Corn

I smoked a few beef ribs on my horizontal wood burner. I went the simple route... covered the ribs with olive oil, sprinkled with kosher salt and cracked black pepper.
I wrapped the ribs and let them chill overnight....





I seasoned my corn with black pepper, then wrapped with bacon....


Into the smoker with a bit of hickory.... I smoked at a temperature of about 275 degrees...


After 2 hours, I added the corn...


I smoked the corn until the bacon was firm and a bit crisp.....




The ribs turned out moist and tender, the bacon wrapped corn was delicious....



The ribs with bacon wrapped corn, watermelon, cantelope, and broccoli....

It was a pretty tasty meal! :)

I'm getting fat just reading your blog! How many meals will you get out of all those viddles? and where did you get watermelon, and cantalope this time of year?

Cowgirl, you amaze and inspire me again. This is a very nice looking meal. You have talent far off the scale. Never had bacon wrapped corn. Tell me about taste and texture. I showed my wife, she didn't like the idea. But, the smokers here are mine and I do the cooking. I should try this later this year after we harvest our corn. I have never saw a picture or heard of bacon wrapped corn. You should post this over on SMF. Its funny, yesterday they were talking about a recipe book and that you would need a chapter. Heck, you and a few others would need a book just for yourselves.

lol Jeff, I had company again, so there were only a few leftovers. :)
I also smoked extra corn for use in another dish.

The fruit came from the grocery store....if I had a way to grow it myself during the winter months, I'd sure give it a try. lol

I love bacon smoked corn...it doesn't need salt due to the bacon, but I like to put pepper on each one before wrapping. You could season them with dry rubs or just about anything you like.

I'm not fond of limp bacon, so I smoke the corn until I get the bacon firm to the touch and a bit crisp when possible.
You could run them under a broiler if your smoker does not get hot enough...

Sometimes I made a sauteed corn off the cob dish with bacon and onions...this is similar, but with a nice smokey flavor added.
Hope you give it a try sometime. :)

I forgot to mention...the addition of shredded cheese on top of the smoked corn is pretty tasty too. :)

Glad you went and posted the pics over on SMF. I gave you points for the meal. I don't know if you ever had culinary training or not. But if you haven't, your a definite natural at dressing a dish. I mean with the watermelon and all on the side there, that is art. Almost looks too good to eat.

Once again, Lady J comes up with a delicious winner! I spend so much time trying your ideas, I have little time to create more of my own. Next time, give some Marinated BBQ Onions with your meal - guess where the recipe might be? LOL

I agree with David. You are "a natural." I have been cooking for many, many years and I have also been called "a natural," but your ideas and presentation is outstanding...if not a little on the high caloric and cholesterol "you gonna die" scale. But you only live once...and who wants to live forever...or even to when you're old and feeble? What would we miss? The drooling? ;)

I think your recipes are good enough to assemble into a cookbook for the fearless, people who aren't concerned with their weight or diet. Maybe name the book Fearless Fat-Prone Cookery, or Victorious Victuals. I am drawn to your blog time and again to see what you have been up to and I have never been bored.

Keep up the good work.

Looks delicious! I was trying to find corn on the cob today but it's too early in the season for it still in the husk. I purchased sweet corn anyway for my camping trip and was wondering what would be the best way, and after looking at your campfire ribs I noticed the comment about the bacon-wrapped corn and thought wow, how yummy !!!!

I'm definitely going to read the rest of your blog and I'm very excited to have new things to cook over the fire instead of just burgers and dogs.

When I do the corn in my smoker I just leave it in one place for the whole cook. If you try it over a fire you might want to use toothpick to hold the bacon onto the corn. It tries to fall off when you move the cobs around.
