Smoked Crab, Smoked Cheese Omelette...

Thanks to smoking friend Salmonclubber for the idea....
I used some of the smoked crab legs from Christmas dinner and some cold smoked cheese I smoked not long ago...and made an omelette...





I fried a few cubed potatoes and onions in butter.....


Beat three eggs with a bit of milk...cooked the eggs in butter and topped with the smoked crab meat, potato/onion mixture and some smoked cheese....




I fried too many potatoes so I served them on the side, topped the omelette with more smoked cheese and minced green onion...














It was so tasty!! The smoked crab and smoked cheese came through...



Thank you again Salmonclubber for the great idea. :)

So...remind me about this next week....

When I come down with a cold.

I had to check out the fresh snow. It's not enough for an angel or ice cream, but it's pretty! :)












No vehicle tracks on my road... just my sneakers.



Brrrrr..... I was shivering while admiring the snow (in my shorts.) I did grab a coat though.





On the way back to the house, I found several wild onion plants peeking out of the ground.

Makes me think spring is right around the corner. :)

So far my plans consist of a few friends coming over to greet the new year with me.

I'm still out of heat and gas, but we're not above roasting marshmallows on toothpics over Bic lighters. :)
Might even try some little smokies! lol

A nice evening...

There hasn't been enough snow to make angels or icecream this year but it was a pretty evening last night... kind of cold and crisp but nice. :)




Christmas Dinner at last. :)

I had Christmas dinner yesterday... better late than never. :)

King crab legs on the drum smoker....




Some sliced potatoes and onions with butter and sprinkled with Harley's dry rub....








The crab smoked on low for about 35 minutes.. just until they were heated through and had a light smoke...





The ribeyes were grilled along with the pouch of potatoes...








The crab legs, ribeye with mushrooms, potatoes and salad....




















I think surf and turf might be one of my favorite meals... :)

Canned Venison in Gravy over Smoked Smooshed Potatoes

This was pretty tasty.. I smoked some potatoes and an onion for this dish while smoking the beef ribs and spam the other day.


The potatoes were rolled in olive oil and seasoned with cracked black pepper and kosher salt.
The onion was buttered and salted...







I cooked a bit of garlic in butter...



Added the cubed smoked potatoes and some of the smoked onion....



Then smooshed them with a fork and added milk to make them creamy. Also seasoned with salt and pepper to taste...


Used a can of my venison...

Heated the venison in a skillet, then thickened the broth to make gravy. You can use flour, cornstarch or brown gravy mix to make it richer. Then season with salt and pepper to taste...




The venison and gravy over smoked smooshed potatoes...



It was warm and filling. :)

A Surprise from Chicago

Wow! I received a huge box in the mail from blog friend Rocco........
I can't believe all of the goodies.






There are things in this box that I've never even heard of. :)

Chile spiced mango and pineapple, orange flavored cranberries, black pepper sauce, belgium chocolate, pasta, mustard, vinegar, coffee... just Wow!


Rocco, your thoughtfulness is amazing... I'm not sure how I can repay you for your generosity!

Some Beef and Beer

I wanted to try a dry rub that I picked up in Oklahoma City this week. It was called Harley's .

At first I thought it tasted too salty so I didn't put too much on the beef ribs.






Into the drum...




also smoked some potatoes, an onion and some spam...



sprinkled the spam with cayenne/brown sugar and spritzed with whiskey...













The ribs were great. I like the Harley's rub, the Jamacan beer wasn't as tasty as it looked. :)













I'm happy with the new seasoning and can't wait to try it on something else.

My Jerky Emporium Haul

I went to a place in Okla City called the Jerky Emporium.
They had a big variety of jerky on hand but I was more interested in trying some of their sauces and dry rubs.


I brought home some Smoked Jalapeno Hickory Canyon Mustard....made in Eufaula Oklahoma.
Not sure what I will use this on, but it sounded good. :)



Some From The Woods Hickory BBQ Sauce. I picked this one because it's made in Fairview Oklahoma.

A Shaker of John Henry's Sugar Maple Rub... looks like it comes out of Houston.

Harley's Texas Style Bar-B-Que all purpose seasoning... from Giddings Texas.


A bottle of Bronco Bob's Smoked Bacon Chipole Sauce from Dallas... I liked the sound of the ingredients. :)

and a small bottle of Hula Girl Jalapeno Sauce... from Hawaii.



I'm not sure what I will try these on but it will be fun experimenting. :)

I'm heading to Oklahoma City in the morning for a day of shopping.
The plan is to make it through Bass Pro and the Academy Sporting Goods store without buying anything for myself.

This should be quite a challenge. :)

Christmas Shopping

I left home yesterday with the intent of getting started on my Christmas shopping..... it was a lot harder to do than I had hoped.

I made it home with some shampoo, bubble bath and a new pair of work gloves for myself.
lol Now that I think back... last year on day one of Christmas shopping, I made it home with gloves and a pair of new jeans from the farm supply store.

What do you give to friends who have everything?

I guess these are Cowgirl Q-tons.

Not sure what to call these...

I used some of the BBQ'd pork I canned from the last underground pig cookout.....















Wrapped a bit of the BBQ'd pork, smoked cheese and a sliver of jalapeno in a wonton skin...



Wrapped and ready to deep fry....














They were so tasty, I liked the added jalapeno kick. :)
